Ingredients
- 2 lb Grass-Fed Pork or Beef, your choice of cut, cubed or thin sliced
- 2 Tbsp Cajun seasoning
- 2 Tbsp Olive Oil
- 1 cup Onion, chopped
- 3 cloves Garlic, minced
- 1 Jalapeño, remove seeds & dice
- 4 oz can dice Green Chiles
- 1/8 tsp Cumin
- 1/4 tsp Oregano
- 1 Cup Salsa, your choice
- 1/2 cup Cilantro, chopped
- 1 jar (15 oz) Nopales (Cactus)
- Flour Tortillas, warmed
- Cheddar Cheese, shredded
Directions
- Season pork or beef with cajun seasoning
- Sear pork or beef in olive oil, in a cast-iron skillet for 8-10 minutes or until well browned
- Add onion, garlic and diced jalapeños, cook until tender
- Add diced green chiles and remaining seasonings, mix well
- Add Salsa, simmer uncovered, over medium heat for 15 minutes, stirring occasionally
- Add cilantro
- Drain brine and seasonings from Cactus, rough chop and add to mixture
- Simmer 20 minutes or until meat is tender
- Warm tortillas in the microwave
- Scoop Cactus Junk onto warmed tortillas and sprinkle with cheese.
- Burrito roll & enjoy!
- This freezes great by itself or as burritos!
