Ingredients

  • 2 lb Grass-Fed Pork or Beef, your choice of cut, cubed or thin sliced
  • 2 Tbsp Cajun seasoning
  • 2 Tbsp Olive Oil
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 1 Jalapeño, remove seeds & dice
  • 4 oz can dice Green Chiles
  • 1/8 tsp Cumin
  • 1/4 tsp Oregano
  • 1 Cup Salsa, your choice
  • 1/2 cup Cilantro, chopped
  • 1 jar (15 oz) Nopales (Cactus)
  • Flour Tortillas, warmed
  • Cheddar Cheese, shredded

Directions 

  1. Season pork or beef with cajun seasoning
  2. Sear pork or beef in olive oil, in a cast-iron skillet for 8-10 minutes or until well browned
  3. Add onion, garlic and diced jalapeños, cook until tender 
  4. Add diced green chiles and remaining seasonings, mix well
  5. Add Salsa, simmer uncovered, over medium heat for 15 minutes, stirring occasionally 
  6. Add cilantro
  7. Drain brine and seasonings from Cactus, rough chop and add to mixture
  8. Simmer 20 minutes or until meat is tender
  9. Warm tortillas in the microwave
  10. Scoop Cactus Junk onto warmed tortillas and sprinkle with cheese.
  11. Burrito roll & enjoy!
  12. This freezes great by itself or as burritos!
