Ingredients:
- 2 lbs Mariposa Ranch Ground beef
- 1 lb Mariposa Ranch liver
- 1 lb Mariposa Ranch bacon
- 1 whole onion
- 1/2 cup pickled jalapenos (optional)
- Salt to taste
- Pepper to taste
Note: it is recommended to soak the liver in whole milk overnight.
- Chop up bacon strips into 1/2 inch pieces and heat on a skillet.
- Chop up an onion while bacon is cooking. Remove the bacon when cooked(but not crispy) and cook onions in bacon fat.
- Remove onion when translucent and let drain and cool.
- Chop up pickled jalapenos
- Rinse livers in cold water and remove the membrane on the edges.
- Grind the liver using a meat grinder (best to remove those membranes, or they tend to clog the meat grinder).
- Combine the ground liver with the ground beef, mixing them by hand.
- Combine the cooled bacon and onion with the Ground beef mixture and then mix in the chopped jalapenos.
- Form beef patties to desired thickness and season with salt and pepper.
- Place the patties on the grill for searing and then move them over to the cooler zone for the desired cook time.
Any tips on how to remove the membrane? We tried pulling it off our slices and didn’t have much luck.
