Grilled Flat Iron Steak with Chimichurri Sauce

Ingredients
  • 1 package Mariposa Ranch Flat Iron Steaks
  • Salt & Pepper to taste (or 1 Tbsp of your favorite steak rubs
  • 1/2 cup finely chopped cilantro leaves (about 1 cup before chopping)
  • 1/2 cup finely chopped flat leaf parsley leaves (about 1 cup before chopping)
  • 2 Tbsp minced garlic
  • 3 Tbsp fresh lemon juice
  • 2 tsp red wine vinegar
  • 1 tsp red pepper flakes (or cayenne pepper – use less of this!)
  • 1 tsp ground cumin
  • 1/2 cup Burroughs Family Farms Olive Oil (or what you have in your pantry!)
Directions
  1. Take your Mariposa Ranch Grass Fed Flat Iron Steak out of the refrigerator at least 30 minutes before cooking, rub with salt and pepper, and let it come to room temperature.
  2. Wash cilantro leaves and parsley leaves and dry with a paper towel. Finely chop the cilantro, parsley, and garlic, either by hand or in a food processor with steel blade, (I prefer the food processor, it makes more dishes but it is so easy!!).
  3. Put ingredients into a bowl and add lemon juice, red wine vinegar, red pepper and cumin; stir to combine.  Then stir in olive oil until mixture is well blended; let mixture sit at room temperature at least 15 minutes before serving.
  4. You can cook this steak either on a grill or you can pan fry it on the stove.  To cook on  a grill, preheat gas or charcoal grill to medium heat. (You can only hold your hand there for 2-3 seconds at that temperature.) Put steak on grill at an angle. After about 3-4 minutes, or when you see nice grill marks starting, rotate 45 degrees and cook 3-4 minutes more on first side.
  5. Turn steak over and cook on the second side until the meat is done to your liking.  I cooked my steak right around 12 minutes total for medium rare, but cooking time will depend on the heat of your grill, the temperature of the meat, and even the weather. (Please remember grass fed beef cooks faster than conventional beef, so don’t be afraid to check it sooner than you think you should!)
  6. If it’s not yet grilling weather where you are, feel free to cook this steak inside!  I have a cast iron grill pan that works wonderfully for cooking steaks inside.  Cook time is approximately the same in a grill pan over medium to medium-high heat.
  7. When meat is done to your liking, remove from grill and let rest for 5 minutes, then cut into thin slices across the grain. Serve hot, with Chimichurri sauce spooned over or on the side.
